In the mid 1800's the Viennese had something new to brew as lighter styles of beer were popping up all over Europe. They created what is now know as Vienna malt, the amber malt was stewed after the barley was sprouted, this converted some of the malt starches into sugars, which were then caramelized by a gentle roasting. Our Vienna Lager is brewed with half Vienna malts creating a delicate malt aroma with a slightly caramelized and toasted malt character. Light Bronze in color with a slight bitterness, this beer finishes clean and crisp!

In the 1870's the bottom fermented beers had swept Europe and the bustling working class city of Dortmund, Germany had developed its own adaption of the Pilsner style. The Dortmund style is slightly darker than pilsner, a burnished honey gold, edging toward amber. It steers away from the bold hop bitterness and aroma of Pilsner, preferring a firm maltiness, a full-bodied, slightly sweet palate; and a clean, dry finish. Dortmunder's strength at 5.5-6% resembling the Marzen's. This beer style has been nearly lost in history as World War II was very hard on the city of Dortmund.

In England, Barley Wines and Old Ales often over shadow their close relative the Strong Ale, although the three beers share similar characteristics the Strong Ale is incredibly smooth and drinkable. Strong Ales can be a gorgeous light amber to mid-range brown in color, they are medium to full bodied with a malty sweetness. Hop aroma should be minimal and hop flavor can vary from none to medium in character intensity. Fruity-ester flavors and aromas contribute to the character of this ale. Bitterness is minimal but evident and balanced with malt and caramel like sweetness. Alcohol types can be varied and complex. A rich, often sweet and complex estery character is evident. This process often softens the perceived bitterness. Overall, a fairly strong beer with deep amber, caramelized, fruity, balanced bitterness, and a smooth finish.

In the city of Köln, Germany (pronounced Cologne) they drink and brew Kolsch Beer and the brewers' guild has protected it since 1254. Kolsch is a top-fermented ale, a throwback to the days before lagers took over the Germanic world. Cologne, far closer to Brussels than to Munich, has always had close links to the Low Countries, and these links extended to the local beer culture. The Kolsch offers the simple pleasures of a well crafted beer. It is very pale in color, and the aromatics are a light mélange of hops, malt, and fruit. The Kolsch Beer maintains a bitterness that is quite restrained, although the palate is light-bodied and bone-dry, with a soft malt flavor in the center giving way to a drying, slightly acidic finish. Smoothness is conferred by one to two months of cold conditioning.

Our IPA uses certified Organic Malts and Hops from four countries. It is intended to be novel and different from other IPA's due to the current hop crisis resulting in the dearth of available hops. This scarcity has made it extremely difficult to conform with standard classification. Consequently we have chosen to be creative in the formulation and broaden the possibilities for IPA.

In Great Britain, the more affordable darker beers such as the Brown Ale became popular after the advent of coke fires in malting kilns and the resulting introduction of pale malts in the late 1700's. The Brown Ale became the working class beer for the people of England. Our British Brown Ale is a deep amber brown color with malty aroma, crisp moderate hop edge and a nutty caramel palate. The Brown Ale leaves you with hints of fruit, light chocolate and coffee, maintaining a slightly dry finish.
